    Dr. Seuss Eats Eggs on Toast - Italian Scramble on Focaccia

    Eggs on toast! Eggs on toast!
    “End of month!” cries our host.
    Last month Potter, Seuss this time.
    That’s the theme - trochaic rhyme!

    Do you like eggs on toast?
    That is what I like most!
    Come and cook! Easy fun!
    Get a roll! Grab a bun!

    Bagel, muffin, matzo, too?
    Any starch, Jeanne said, will do!
    Egg from chicken? From a duck?
    It’s just a blog. Who gives a f**k?

    *phew*

    End of August! Eggs on toast!
    What do I make? What will I post?
    Scrambled, poached, sunny side,
    Sometimes best simply fried.

    Do an om’let, roll a crepe!
    So many options could take shape!
    Eggs on toast! Toast with eggs!
    Overflowing garden begs!

    Eggs on toast! Lots of green!
    Peppers, spinach and zu-keen!
    What about... a tomato?
    Sauté it up, it’s good to go!

    Olive oil and garlic, too!
    Scramble eggs, just a few!
    Crushed red pepper! That adds spice!
    Italian herbs! Basil? Nice!

    Slice focaccia, for the base!
    Grill both sides, better taste!
    Veggies, eggs, piled on top!
    Parmesan. That’s it. Now stop!

    Eggs on toast! There they are!
    Italian sandwich superstar!
    Eggs on toast! August done!
    Looking forward to next one!

      *chuckle* thanks guys! rhyming a la seuss is sort of hard to do sans coffee, but the poetry will be up shortly. :)

      LOL! That Seussian poem is just faaaabulous! I love it - and I learnt that this is in fact the trochaic EoMEoTE edition. Who would have thought...!
