Avocado Chocolate Pudding can very easily be doubled, tripled, even quadrupled! Make extra ahead, store in the refrigerator, and have this healthy sweet treat every day!
Put 1 avocado, ¼ cup cocoa powder, 2 tablespoons unsweetened coconut milk, 3 tablespoons maple syrup, 2 teaspoons vanilla extract, and ⅛ teaspoon sea salt in a food processor or blender, making sure to break up any clumps of cocoa powder.
Blend until smooth, stopping the machine every once in a while to scrape down the sides. If the mixture is too thick, add more coconut milk 1 tablespoon at a time.
Transfer Avocado Chocolate Pudding to serving bowls or cups and top with additional garnishes like berries, chocolate shavings, and flaky sea salt.
