Avocado Chocolate Pudding Recipe

Ingredients

  • 1 avocado peeled and pit removed
  • ¼ cup cocoa powder
  • 2 tablespoons unsweetened coconut milk plus more to add for consistency
  • 3 tablespoons maple syrup
  • 2 teaspoons vanilla extract
  • teaspoon sea salt this is a very generous pinch of salt

Optional Garnishes

  • blackberries, blueberries, raspberries, strawberries
  • chocolate shavings
  • flaky sea salt

Instructions

  • Put 1 avocado, ¼ cup cocoa powder, 2 tablespoons unsweetened coconut milk, 3 tablespoons maple syrup, 2 teaspoons vanilla extract, and ⅛ teaspoon sea salt in a food processor or blender, making sure to break up any clumps of cocoa powder.
  • Blend until smooth, stopping the machine every once in a while to scrape down the sides. If the mixture is too thick, add more coconut milk 1 tablespoon at a time.
  • Transfer Avocado Chocolate Pudding to serving bowls or cups and top with additional garnishes like berries, chocolate shavings, and flaky sea salt.
