Almonds: raw vs 24-Hour Soaked
If ever there was a case for hydration to battle wrinkles in the war on aging, this is it.
How to Make Almond Milk at Home
INGREDIENTS
2 cups raw almonds
2 cups water for soaking
2 cups water for blending
pinch of salt
DIRECTIONS
Soak raw almonds in 2 cups of water for 24-48 hours. I soaked mine on the countertop, but if setting the bowl in the refrigerator makes you feel safer,do that.
Drain water and rinse almonds.
Blend soaked almonds with 2 cups of fresh water at high speed for about 2 minutes. Pour ground almond/water mix into nut milk bag set over a bowl. Let "milk" drain freely as much as possible, then squeeze bag with hands.
Season with a tiny pinch of salt. The milk will not taste "salty," but something about the salt there is important.
Store almond milk in refrigerator and use within 2 days.

How long with the almond meal last? Do you need to dry it, or can you also refrigerate and store it for cooking?

It's shelf life is a shorter time than the actual time it takes to make the milk! Sounds like a fun project, though :-)
